Sponge or sponge cake (from Portuguese: bolo; English: cake) is a flour-based cake (generally wheat flour), sugar, and eggs. Sponge cakes and cakes are generally ripened by baking in the oven, although there are also steamed sponges, for example: steamed sponges or steamed brownies. Cakes decorated with a layer (icing) of butter cream (buttercream), fondant, or marzipan are called tarts (tarts). Ornate or unadorned cakes are used as a dessert or special dish of a wedding reception or birthday party. In Western-style wedding receptions and birthday parties, the tarts-cutting ceremony is one of the events. In Indonesia, tumpeng rice often replaces the role of cake as a special food in various memorial ceremonies. Cake cutting events are also often replaced by tumpeng cutting events. Large-sized cakes with a rectangular or round shape are intended to be cut into pieces when sold or served. A sponge cake that is rolled up and contains butter cream or jam is called a sponge roll. Various kinds of pudding also use the basic ingredients of sponge cake pieces that are placed on the bottom of the baking sheet before being doused with jelly.
